When to express? How long can you keep in the sterilised....

When is the best time to express breast milk? Once the bottle is sterlised the instructions say the bottle stays sterile for 3hours so have I got to use the bottle with the milk in before 3hours is up or is the bottle ok to sit in the fridge with the expressed milk in until I need it, the idea is for my hubby to use it at night to give me a break as my little girl feeds every 3hours during the night, I have the tommy tippee closer to nature bottles,
