Anything with sweet potato and lentils is nice - use red split lentils if you can, they're yum! x
fry leeks/onion in knob of butter add baby veg stock and florets of brocolli and cauliflour and plenty of red lentils boil for 30mins so the veg is very soft and the lentils are cooked through, i used to mash the veg into a lumpy stew but he now has it as it comes...he loves it! (and so does mummy!)

moonbean, i actually cheat (slap on the wrist) and use the tinned ones in tesco (nr the tinned toms and baked beans etc), about 45p a tin i think, saves all the long soaking etc first, but they do need rinsing off first xx
