  I think as long as it is supermarket bought, in a sealed tub, and well within date you should be fine. I would avoid getting it from a deli counter though.
  
  Also - i'd be extra careful about getting it in the fridge quick, and storing it properly.
  
  I've been eating coleslaw all the way through - and I think the chances of getting listeria from it are very tiny, as long as you are careful!
