Foody q - Carbonara sauce

I have a few recipes for this as want to make it for Charlotte.

All of them you add egg yolks to the sauce. Is this ok for a 16 month old? I always use good quality free range eggs.

I know most egg things don't have to be as well cooked after 12 months but not sure on egg yolks in a sauce as you don't cook them that much (or could end up with scrambled egg)!

I will also be adding pancetta or bacon - only a small amount so the salt content would be ok wouldn't it?

Also could you freeze it? I would also need to add cream to the sauce.
