Tofu

Does anyone know if you can use tofu in a recipe say blended with sweet potato & carrots, then freeze it?
Also when you come to defrost it, is it ok just to re-heat in the microwave?

    Hi Louise, I think I have read somewhere along the way that tofu is not good frozen as the texture becomes too spongy..although not completely sure so hopefully someone can give you a more definite answer. I tried making a fruity tofu thing from annabel karmels book and angelo hated it so if you have any good tofu recipes let me know!.x

    Thanks Nicole, I too have the AK books and all I could find on tofu is to mix it with banana but I wanted to be a bit more adventurous than that lol.
